Minestrone
Serves 8
4 rashers bacon or salami (for a richer flavor)
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, chopped
2 stalks celery, thinly sliced
½ head cabbage, coarsely chopped
3 medium carrots, diced
250g green beans, sliced
1 small zucchini, diced
2 tablespoons parsley, chopped
1 x 425g tinned tomatoes (choose one with tomato paste added) or ripe tomatoes can be used instead
2 x 425 tins cannellini beans (drained) 2L of beef stock
parmesan cheese – for serving
½ cup small macaroni, cooked and drained
Sauté onion, garlic, bacon, carrots and celery in oil.
Add the stock and simmer for 15 minutes until vegetables are tender.
Add tomatoes, zucchini, green beans and cabbage.
Cook for a further 10 minutes.
Add cannellini beans and parsley.
Serve with grated parmesan.
