Zucchini and basil soup
Serves 4-6
500g zucchini, finely sliced
1 small onion, finely
diced 1 tablespoon butter
2 cups chicken stock
½ teaspoon curry powder or cumin
½ teaspoon lemon juice
cream or sour cream basil leaves, shredded
Sauté onion and zucchini in a large saucepan.
Add stock, curry powder and lemon juice.
Bring to boil and simmer until zucchini is tender.
Puree and serve with a swirl of cream or sour cream.
Top with shredded basil.
